Easy Whole 30 Chicken Tenders

These are so easy and I will tell you my daughter loves them. They don’t take very long and you may already have most of the ingredients in your cabinet. I love to make these with really good chicken because that makes all the difference. I spend a lot of money on our meat, but I promise it is worth it.

You can even make a double batch and have some leftover! great way to mix up the chicken dishes because I do not know about you, but I get so bored of chicken sometimes.

INGREDIENTS

INSTRUCTIONS

  1. Preheat oven to 450.

  2. Crack eggs into a bowl and whisk.

  3. In a separate bowl combine almond meal, coconut flour, salt, pepper, and paprika. stir with fork to combine.

  4. Using one hand, place chicken tenders into the eggs and coat. Toss into the almond meal/coconut flour mixture and use your other hand to coat in the breading.

  5. Place coated chicken on the parchment paper lined baking sheet.

  6. Continue steps 5-6 until all of the chicken is coated and on the baking sheet.

  7. Spray the tops of the chicken with cooking spray (I use Spectrum Naturals Organic Coconut Oil Spray, 6 Ounce (Pack of 2) Packaging May Vary)

  8. Bake in oven until chicken is cooked through, 20-25 minutes
