Potato, Pepper, Onion & Sausage Stir fry

This is a fan favorite in our house and can be so easy if you buy the right items!

I have even doubled it for when we have friends over and want leftover for meal prep for the next few days. But you need to be sure you have larger pans, as the ingredients combined are bulky!


Ingredients

  • 2 packages of Teton cooked uncured polish kielbasa sausage, cut into 1/4″ slices

  • 1/2 green bell pepper, cut into strips

  • 1/2 red bell peppers, cut into strips

  • 1/2 yellow bell pepper, cut into strips

  • 1 red onion, cut into cubes

  • 4 small or 2 large potatoes, peeled and cut into cubes

  • olive oil, for cooking

  • salt and pepper, to taste

Instructions

  1. Heat 2 tbsp olive oil in a large cast iron skillet, or any skillet that has a heavy bottom, over medium-high heat. Add potatoes and season with salt and pepper. Cook for about 8-10 minutes or until lightly brown, stirring occasionally.

  2. In a separate nonstick skillet, add kielbasa slices. Cook for about 5 minutes until browned at all sides. Remove from skillet and set aside. Add peppers and onions to the skillet and season with salt and pepper. Cook for 5 minutes, or until crisp-tender.

  3. Stir together everything and serve!

**Looking to save time— buy chopped onion, frozen sliced bell peppers and already cooked & sliced potatoes (I use the costco ones when short on time).
