Salads are my favorite lunch, but not any old salad, I’m talking a Power Salad. And if you love salad as much as I do or you are trying to love salads, keep reading because I’m going to tell you how to build a salad that will satisfy you and leave you feeling amazing.

what is a Power Salad? It’s a salad packed full of nutrients–vitamins, minerals, healthy fats, protein, and of course, flavor. The flavor comes from paring the ingredients well, but mostly the dressing you use! If you’re like me, dressing is so important because if can make or break your salad flavor and nutrition wise.

Here is an example of a power salad that I’m really loving at the moment:

  1. I don’t only choose one kind of lettuce or base for my salad. I like to use a mix and in this one it is baby spinach , Swiss chard, arugula and mixed greens.

  2. Was feeling tuna today and it was bomb!

  3. I chose red bell peppers and forgot to show the cucumbers !

3. I chose grapes and strawberries they both taste good with balsamic

4. I chose feta cheese. And it is pasteurized since I am pregnant. So be sure to pay attention to the latest guidelines On what is recommend and not when you are pregnant ❤️

5. I added hemp hearts to my salad and it adds so much nutrients and is tasteless. My other favorite topping are raw seeds by goraw

Honey Mustard Balsamic dressing

  • 3/4 cup extra virgin olive oil or avocado oil

  • 1/4 cup balsamic vinegar

  • 2 tablespoons honey mustard

  • 1 clove garlic, minced (~ 1 teaspoon)

  • 1/4 teaspoon red pepper flakes

  • Salt and pepper to taste

I literally use this on every salad I eat. My kids love it and use it for dipping veggies and eating my lettuce.
