Healthy Instant Pot Italian Sausage & Peppers

Looking for a quick and delicious meal after a busy day? This Instant Pot Italian Sausage & Peppers recipe is packed with protein, flavor, and comes together in no time—perfect for fueling your body after a workout!

This is my son’s favorite meal—he begs for it weekly!

Ingredients:

  • 1 lb Italian sausage (mild or spicy)

  • 1 tbsp olive oil

  • 1 onion, sliced

  • 2 bell peppers, sliced (any color!)

  • 3 cloves garlic, minced

  • 1 jar of your fav pasta sauce

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • ½ tsp black pepper

  • Fresh basil or parsley for garnish

Instructions:

  1. Sauté the sausage: Set your Instant Pot to “Sauté” mode. Add olive oil and brown the sausages for about 2-3 minutes per side.

  2. Cook the veggies: Add the sliced onions and bell peppers to the pot. Sauté for 2-3 minutes until slightly softened. Stir in garlic and cook for another minute.

  3. Add remaining ingredients: Pour in the pasta sauce, Italian seasoning, salt, pepper, Stir everything together.

  4. Pressure cook: Seal the Instant Pot lid and set to “Manual” for 8 minutes.

  5. Quick release & serve: Once done, let it manual release the pressure for 10 min and then quick release the rest - open and give everything a good stir. Serve over pasta,

  6. Garnish & enjoy: Sprinkle fresh basil or parsley on top and dig in!
