Chicken Sausage Veggie Pasta

If you have read my staple items grocery list post, I always have Cybele’s pasta in my pantry and love to build off of it because it is so packed with nutrients you just can’t go wrong.

We had a ton of grape tomatoes left from Costco last week and I wanted to use them and along with a few other ingredients, this is what I came up with—a deliciously light and flavorful, nutrient packed pasta dish!


The whole dish comes together in less than 30 minutes and you can spice it up by adding some crushed red pepper flakes or a little grated Parmesan on top. This made enough for leftovers for tomorrow and I am excited to enjoy it for lunch!

INGREDIENTS

  • 1 box of Cybele’s Pasta (I used the superfood green)

  • 1 package of True Story organic italian chicken sausage (4 links)

  • 1 - 8 oz package of crimini mushrooms (sliced)

  • 1 TSP of Olive oil + extra to drizzle over pasta at the end.

  • garlic salt and pepper to taste

Instructions

  1. Boil water in large pot to cook the Cybele’s pasta according to the box

  2. While the water is heating up, you can also heat up a large skillet with 1 TSP of olive oil and then add in the tomatoes, mushrooms and some garlic salt to taste and cook on high for about 15-20 mins be sure to stir occasionally.

  3. while that is cooking be sure to add pasta to the water and cook and drain and set aside.

  4. cut up the chicken sausage into whatever size pieces you would like and sear in a pan for about 10 minutes. stirring occasionally

  5. once the tomatoes and mushrooms are cooked down, add the pasta and chicken sausage, drizzle with about 2 TSP of olive oils and toss around and turn heat off. add any more salt and pepper to taste.
